Served on its own or with this delicious Italian salad, these Bolognese Melts only take minutes to make!
400g packet fresh traditional garlic bread
425g tub Latina Fresh Beef Bolognese pasta sauce
1 cup grated pizza cheese
200g bag chopped cos lettuce (See Tip)
3 Roma tomatoes, quartered lengthways, cut into thin wedges
1 green capsicum, cut into thin strips
½ small red onion, thinly sliced
1/3 cup drained, pitted kalamata olives
½ cup coarsely chopped fresh parsley
¼ cup bottled Italian salad dressing
Place garlic bread, buttered-side up, on a large oven tray. Remove paper insert from bread.
Cook in a very hot oven (220C) for about 8 minutes, or until light golden and crisp. Remove.
Meanwhile, heat sauce in a medium saucepan until hot. Spoon evenly over garlic bread. Sprinkle with cheese. Return to oven.
Cook for a further 5 minutes, or until cheese is melted. Remove.
Meanwhile, make salad. Combine all ingredients in a large bowl. Toss well.
Cut garlic bread in half crossways. Serve with salad.
TIP! Chopped cos lettuce is available in 200g bags from the refrigerated fruit and vegetable section of major supermarkets. Or trim base of a baby cos lettuce, then chop leaves.
