You just can't go wrong with this 4-ingredient recipe! Perfect for dessert - or even as an indulgent brekkie!
2 cups finely chopped fresh pineapple (300g)
1 cup brown sugar, firmly packed
270ml can coconut milk
400g box frozen French-Style crepes
Place pineapple and sugar in a large frying pan. Cook, stirring over a medium heat until sugar is dissolved. Bring to boil. Add milk. Gently boil, stirring occasionally, for about 15 minutes, or until slightly thickened. Remove from heat.
Meanwhile, heat crepes according to packet directions.
Serve crepes with warm sauce and vanilla ice-cream (optional).
TIP! You will need about a 600g piece of pineapple. Crepes are available in the freezer section of major supermarkets. Try serving sauce over pancakes, ice-cream or waffles.
