5-Ingredient Cheesy Pesto Baked Chicken

5-Ingredient Cheesy Pesto Baked Chicken
Prep: 10 Minutes - Cook: 30 Minutes - Easy - Serves 4

TIP! We used Barilla Pesto Alla Genovese, a pesto sauce available in jars in the pasta section of major supermarkets. Refrigerate remaining pesto for another use.

Ingredients

4 x 250g chicken breast fillets

1 tablespoon olive oil

½ cup pesto sauce (see Tip)

1 cup grated mozzarella

Rocket leaves, to serve

Method

  1. Toss chicken with oil and salt and pepper in a large bowl. 

  2. Place chicken on an oven tray lined with baking paper. Spread 1 ½ tablespoons pesto over the top of each fillet. Sprinkle each with ¼ cup cheese.  

  3. Cook in a moderately hot oven (190C) for about 25 to 30 minutes, or until chicken is cooked and cheese is lightly browned.

  4. Serve with rocket.
