4 x 250g chicken breast fillets
1 tablespoon olive oil
½ cup pesto sauce (see Tip)
1 cup grated mozzarella
Rocket leaves, to serve
Toss chicken with oil and salt and pepper in a large bowl.
Place chicken on an oven tray lined with baking paper. Spread 1 ½ tablespoons pesto over the top of each fillet. Sprinkle each with ¼ cup cheese.
Cook in a moderately hot oven (190C) for about 25 to 30 minutes, or until chicken is cooked and cheese is lightly browned.
Serve with rocket.
