Ingredients
375g packet dried mixed fruit (2 cups)
1/3 cup brandy
600g packet caramel mud cake mix
2 eggs
60g unsalted butter, melted
Icing sugar mixture, to decorate (Optional)
Method

Grease a deep 20cm round cake pan. Line base and side with baking paper, extending 5cm above pan edge.

Place mixed fruit, brandy and 2 tablespoons water in a medium saucepan. Bring to boil. Gently boil for 2 minutes, or until fruit is soft. Remove. Cool to room temperature.

Place cake mix in a large bowl of an electric mixer. Reserve icing sachet for another use. Add eggs, butter, fruit mixture and 2 tablespoons water. Beat on low speed until just combined. Increase speed to medium. Beat for a further 1 minute, or until thick. Spoon into prepared pan.

Cook in a moderately slow oven (160C) for about 1 hour and 20 minutes, or until a skewer inserted into the center comes out clean. Remove. Stand in pan for 20 minutes. Turn out onto a wire rack to cool completely.

To decorate, place a snowflake ornament on top of cake. Dust top with sifted icing sugar. Carefully remove decoration.
