1kg lamb mince
1 cup packaged dried garlic and herb breadcrumbs
2 eggs, lightly beaten
1 large onion, finely chopped
1 cup coarsely chopped fresh parsley
Mint jelly and mashed potato, to serve (optional)
Grease a 14cm x 24cm large loaf pan. Line base and sides with baking paper, extending paper 5cm above pan edges.
Place mince in a large bowl. Add breadcrumbs, eggs, onion and parsley. Season with salt and pepper. Mix well. Press firmly into prepared pan.
Cook in a moderate oven (180C) for about 1 hour, or until meatloaf is cooked through. Remove. Stand in pan for 20 minutes. Transfer to a serving plate.
Serve warm with mint jelly and mashed potato.
