Want to become a dessert master just like Adriano Zumbo? Well besides practice (and lots of it), Australia's own Willy Wonka will let you in on a few other tips, hacks and nuggets of advice that can take your dessert game to the next level.
1. Which piece of equipment should you invest in?
Digital scales, a digital thermometer and a mixer.
2. What should you throw out?
Your benchtop blender. A stick blender is more versatile and gives you more control, and if you get one with a bowl attachment, it's the perfect size for sauces. Your food processor will handle any jobs too big for a stick blender.
3. Best kitchen hack?
The microwave can be your best friend.
4. Essential pastry skill?
Learn to make puff pastry. It's time-consuming, but worth it, and opens the gate to lots of other skills.
5. How do you pick a dessert for a dinner party?
It's all about balance, season, weather and/or theme.
6. How do you match wine to dessert?
I'm not a big believer in drinking sweet wine with sweet dessert – it's overload! I prefer a drier cleaner wine with my dessert, or a good spirit or aperitif.
7. Last-minute dessert?
So many options! Just stroll around the supermarket to get some inspiration. For example, you could saute some chopped apples, then put them in a nice glass with some crushed up plain biscuits and ice-cream for a twist on apple pie. Or melt down your favourite chocolate bar and drizzle it over ice-cream. You're only limited by your imagination.
9. Best advice for a novice cook?
Never give up. Desserts take time and practice. Document what worked and what didn't and take it with you to the next dessert. There's no such thing as failure, just experience.
