‘Start by melting 200g dark chocolate and 20g butter over a low heat until smooth. Add 6 egg yolks and stir until combined. In a separate bowl, place 6 egg whites and beat with an electric mixer until stiff. Slowly add the egg whites to the chocolate and stir. Once combined, pour into cups and leave in the fridge to set. While the mousse sets, you can start on the ganache.
‘Add 2 cups of cream to a mixing bowl and heat in the microwave for 30 seconds. Add 200g of milk chocolate and whisk until smooth and creamy. Pour over the mousse and smooth across. For the final touch, heat 1 cup raw sugar over a medium heat until melted. Once the sugar has melted, add 90g butter and stir until combined. Pour ½ cup cream and stir. Once the caramel boils remove from heat and add 1 tsp of salt. Drizzle over the ganache and allow to cool before eating.’
