1 ¾ cups plain flour, plus extra for dusting
½ tsp bicarbonate of soda
100 g unsalted butter, melted
¾ cup firmly packed brown sugar
100 g flaked almonds, finely chopped
1 cup pure icing sugar
- Preheat oven to 160°C. Sift flour and bicarb of soda into a large bowl. Whisk together butter, brown sugar and whole egg in a second bowl. Make a well in centre of flour mixture and add egg mixture, then stir until a dough forms.
- Line 2 oven trays with baking paper. Roll out 1½ tablespoons of the dough on a lightly floured surface into a 2cm-wide log. Repeat to make 18 logs in total. Form logs into rings, gently pressing ends together, then put on prepared trays. Brush with eggwhite. Sprinkle over almond, pressing gently into dough. Bake, swapping trays halfway, for 12 minutes or until firm. Cool completely on trays. Sift over icing sugar. Serve.
