Ingredients
Cooking oil spray, to grease
125 g unsalted butter, diced
½ cup caster sugar
1 tsp vanilla extract
2 eggs
1½ cups self-raising flour
1 tsp ground cardamom
1 tsp ground cinnamon
¼ cup milk
3 fuji apples
Extra 1 Tbsp caster sugar
Extra 1 tsp ground cinnamon
2 Tbsp icing sugar to dust
Method
- Preheat oven to 180°C. Grease a 20cm round springform tin with cooking oil spray. Line base and side with baking paper.
- Put butter, caster sugar and vanilla in the small bowl of an electric mixer and beat, using paddle attachment, until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Sift over flour and spices, add milk and stir until just combined.
- Spoon mixture into prepared tin. Peel, core and quarter apples, then thinly slice. Push slices into batter, leaving curved half of each slice exposed. Combine extra caster sugar and cinnamon in a small bowl, then sprinkle over apple. Bake for 30-35 minutes or until cake is cooked when tested with a skewer. Transfer to a wire rack to cool or serve warm dusted with icing sugar.
