400 g lean pork mince
2 tablespoons Thai seasoning
extra 1 tbsp Thai seasoning
1 litre water
1 litre salt-reduced beef stock
1 package fresh mixed soup vegetables starter vegetables and baby corn
1 can tinned baby corn cobs
1 handful fresh herbs, for garnish
- Take 400g lean pork mince and add 2 tablespoons Thai seasoning mix. Mix well and shape into meatballs.
- Combine 1L each water and salt-reduced beef stock in a pan, bring to the boil and reduce the heat. Add an extra 1 tablespoon seasoning mix, simmer for 5 min. Add meatballs and cook until tender, then add vegetables and baby corn. Simmer for 2 min. Garnish with fresh herbs to serve.
