If you’ve eaten breakfast in the past four years, chances are you’ve eaten smashed avocado on toast. Rich and creamy avocado is the perfect foil for crunchy toast and the variations are virtually unlimited. Here are some of our current favourites (BYO waiter with a man bun!).
Sumac, feta and mint avocado toast
Mash ripe avocado over slices of toasted sourdough. Crumble over some feta, tear over a few mint leaves, add a pinch of lemony sumac and a good drizzle of olive oil.
Spread toasted sourdough (we like it on Turkish too) with Vegemite, top with smashed avo, slices of tomato and cracked black pepper
Avocado on toast with smoked salmon
Top toasted sourdough (or pumpernickel or dark rye) with smashed avo. Then add slices of smoked salmon, chopped mint, chopped chilli and some finely grated lemon zest. Cracked black pepper finishes it off.
