Ingredients
220g spiral pasta
1/2 cup buttermilk
2 ripe avocados
1/2 cup coriander
1/2 cup lime juice
1 teaspoon cumin
Salt & pepper to taste
1/4 cup crispy bacon, diced
1/4 cup chopped tomato
1 spring onion, sliced finely
Method

Cook pasta to packet instructions.

Place buttermilk, one of the avocados, 1/4 cup coriander, 1/4 cup of the lime juice, cumin, salt and pepper in a blender and process until smooth.

Place warm, cooked pasta in a bowl and add crispy bacon pieces, tomato pieces, the remaining avocado which has been cut into pieces, spring onion, remaining coriander and remaining lime juice. Stir to combine.

Place avocado mixture from blender into the bowl with pasta mixture and stir to combine.

Place into bowl and serve.
