This cheat sauce is my go-to last-minute dessert topping. You’ll get very happy customers in under 10 minutes and kids and grown-ups will be asking for seconds. Who doesn’t love a hot caramel sundae?
The other great thing about this simple sauce is that you can make up a batch and keep it in the fridge for days/weeks to follow. If you have a big group of people to feed it makes the perfect dessert – just toast some almonds, get a good quality tub of ice cream and everyone will be happy. It was our dessert pretty much every night of our beach holiday – it’s great on ice-cream whether in a bowl or cone.
It can also be used for sticky date pudding – a truly versatile little sauce that once made will be done so again and again.

Cook time: 8 mins
- 2 cups brown sugar
- 1 cup thickened cream
- 250g butter
- Throw all ingredients into a cold saucepan, turn on high heat and wait for it to melt.
- After it has been brought to the boil, turn to low and simmer for 1-2 minutes.
- Turn off heat and set aside.
TIP: You can serve hot drizzled over ice cream with some toasted almonds, or keep in the fridge cold. Scoop out as much as you need and reheat.
