Ingredients
1 tablespoon olive oil
3 sliced spring/green onions
1 clove crushed garlic
1½ cups medium-grain rice
5 cups hot salt-reduced vegetable stock
¾ cup baby spinach leaves
¾ cup chopped broccolini
½ cup grated Parmesan
500 g beef strips, seared seared beef strips if desired (optional)
Method
- Heat 1 tablespoon olive oil in a wok or saucepan over medium heat. Add 3 sliced spring/green onions and 1 clove crushed garlic, cook for 1-2 min. Add 1½ cups medium-grain rice to the pan, stir well.
- Slowly add 5 cups hot salt-reduced vegetable stock, ½ cup at a time and stirring well after addition. Add ¾ cup each baby spinach leaves and chopped broccolini with the last of the liquid. Stir through grated parmesan cheese. Serve topped with seared beef strips.
