800 g chicken or regular beef mince
1 brown onion, finely diced
1 garlic clove, crushed
1 Tbsp chopped parsley
1 Tbsp chopped chives
¾ cup fresh breadcrumbs
⅓ cup barbecue sauce
4- 5 middle bacon rashers, rind removed
- Preheat oven on 180°C (160°C fan forced). Place the mince, onion, garlic, herbs, fresh breadcrumbs, egg and barbecue sauce in a bowl and mix until well combined. Season with pepper.
- Lightly grease a 10 x 21cm loaf pan. Line the pan with bacon rashers, leaving enough hanging over at the sides to wrap over the top. Place mince mixture into the pan, pat down firmly and wrap bacon over the top.
- Place in the oven and cook for 40 min. Serve sliced with vegetables and salad.
