1 red onion, cut into wedges
1 red capsicum sliced into strips
1 yellow capsicum sliced into strips
4 small chicken breast fillets, thinly sliced
40 g packet fajita seasoning mix
juice of 1 lime
12 flour tortillas, warmed for serving
½ iceberg lettuce, finely shredded
- Place onion, capsicum strips, chicken breast slices and fajita seasoning into a large baking dish. Drizzle with 2 tablespoons olive oil and toss well to combine. Cover and chill until required.
- Preheat oven to 200°C (180°C fan-forced). Bake in the oven for 25-30 min, stirring once or twice during cooking time. Remove and squeeze over lime juice.
- Serve baked chicken fajita mix over warmed flour tortillas and shredded lettuce. Top with extra light sour cream, guacamole, coriander sprigs and sliced jalapeños if desired. Garnish with lime wedges.
