5 medium desiree potatoes cut into 3cm pieces
1 tsp mild paprika
2 x 375 g packets extra lean italian-style sausages
1 red onion halved, cut into thin wedges
2 x 250 g punnets truss cherry tomatoes
1 packet mixed salad leaves to serve
¼ cup French dressing to serve
- Place potatoes in a large oiled roasting pan. Drizzle with 2 tsps oil. Sprinkle with paprika. Season with salt and pepper. Toss to combine.
- Place sausages and onion in a separate large bowl and toss in 2 tsps oil.
- Cook potatoes in a hot oven (200C) for 30 minutes. Remove from oven. Arrange sausages and onion over top. Cook for a further 10 minutes. Remove from oven. Add tomatoes. Cook for a further 10 minutes, or until sausages are cooked.
- Serve with mixed leaves and salad dressing.
