This cracker noodle salad is big on flavour and easy on the back pocket! And it's ready in no time at all!
200g green beans, trimmed, cut into 2cm pieces
1 ½ cups shredded carrot
½ x 250g bag bean sprouts, trimmed
1/3 cup unsalted roasted peanuts
½ cup crispy fried shallots
¼ cup satay sauce
2 tablespoons Chang’s Oriental Fried Noodle Salad Dressing
1 tablespoon lime juice
100g packet fried noodles
Cook beans in a large saucepan of boiling water for about 2 minutes, or until tender. Drain. Rinse under cold water. Drain well.
Place beans, carrot, sprouts, peanuts and shallots in a large bowl. Mix well.
Combine satay sauce with dressing and juice in a small jug. Add to beans mixture with noodles. Toss to combine.
TIP! Try serving salad with pan-fried chicken or pork. Crispy fried shallots are available from the Asian section of major supermarkets or Asian grocers.
