2.25 cups self-raising flour
⅓ cup brown sugar firmly packed (75 g)
½ cup dark baking choc bits (80 g)
⅓ cup rice bran oil (80 ml)
2 tbsp honey
½ cup milk (125 ml)
1 cup mashed ripe banana
- Line a 12-hole muffin pan (¹⁄³-cup capacity) with paper cases.
- Sift flour into a large bowl, then stir in sugar and choc bits. Make a well in the centre.
- Whisk oil, honey, milk, eggs and banana in a jug. Add to dry ingredients. Stir until just combined. Divide among paper cases.
- Cook in a hot oven (200C) for about 15 to 20 minutes, or until golden and cooked. Stand in pan for 5 minutes, then lift out onto a wire rack to cool.
