75 g butter, softened
110 g soft brown sugar
125 g plain flour
75 g wholemeal flour
2 tsp baking powder
4 very ripe bananas, mashed
75 g pecans, each snapped in half
75 g butter
75 g cream cheese
150 g icing sugar
3 passion fruit, halved and seeds and pulp scooped out
- Heat the oven to 180C/fan160C. Beat the butter, sugar, flours, baking powder, eggs and banana together.
- Stir in the nuts and spoon into a lined and buttered 450g loaf tin. Bake for 1¼ - 1½ hours or until a skewer comes out clean. Cool for 10 minutes in the tin then lift out and cool on a rack.
- To make the frosting beat the butter until soft, beat in the cream cheese and then the sugar and 2 tbsp passion fruit juice. Frost the loaf and drizzle over the remaining juice, leave seeds in if you like or sieve them out.
