Banana spring rolls

Banana spring rolls
Cook: 15 Minutes - medium - Makes 8 - Vegetarian - nut-free - pregnancy-safe

Spring roll wrappers, rolled up with fresh bananas and brown sugar, then fried until golden brown. Served a la mode.

Ingredients

2 litres oil, for deep-frying

2 bananas

8 frozen spring roll wrappers, thawed

2 tbsp brown sugar

4 scoops vanilla ice-cream (optional)

½ cup dark chocolate dessert sauce, warmed (optional)

Method

  1. Fill a deep fryer or large saucepan ⅓ full with oil and heat over medium heat to 170°C.
  2. Peel the bananas and halve lengthwise, then cut each piece in half again. This will give you 8 pieces in total.
  3. Lay 1 spring roll wrapper flat on a clean surface. Place 1 banana piece diagonally across the corner of the wrapper and sprinkle with 
a little brown sugar. Fold in the sides then roll up tightly to enclose the filling. Brush edges with a little water and press to seal. Repeat with the remaining wrappers, banana and brown sugar.
  4. Fry the bananas for 4 min or until evenly browned all over. Remove from oil with 
a slotted spoon and drain 
on paper towel. Serve the spring rolls hot or warm 
with ice-cream and dark chocolate dessert sauce. Garnish with a few strawberries if desired.
