50 cm long baguette, halved lengthways
¾ cup barbecue sauce
1 ½ cups shredded cooked chicken breast (we used barbecue chicken)
1 small red onion, thinly sliced
¼ cup coriander
2 cups shredded pizza or mozzarella cheese
- Preheat the oven to 200°C (180°C fan forced). Line a large baking tray with baking paper. Place baguette halves onto the baking tray. Press down the centre of the baguettes to hold the filling. Spoon in the sauce and spread with the back of a spoon.
- Divide all the toppings evenly over the baguette pieces, finishing with cheese. Bake for 15 min or until golden. Cut into portions and serve topped with snow pea sprouts or sliced spring/green onioins.
