1 ½ tsp freshly ground ground black pepper
1 tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
¼ tsp ground cumin
1 large pinch chilli powder
1 tsp brown sugar
1 large pinch citric acid
2 large potatoes, washed, dried
2 litres vegetable oil, for deep-frying
- 1 Combine spices, sugar and citric acid in a large zip-lock bag and set aside.
- 2 Using a crinkle cutter or straight mandolin blade, cut potatoes into 1.5mm slices. Pat dry. Heat oil in a large deep frying pan until 180°C. Fry potato slices until crisp, then drain on paper towel.
- 3 Transfer to spice mixture in bag and shake well to coat evenly. Transfer to a serving bowl and serve.
