450g peaches (stoned weight, about 4), plus 1 peach to serve
1 lemon, zested and juiced
125ml Asti, or another sweet sparkling wine
2 tbsp golden caster sugar
Whizz all the ingredients in a blender, then pour into a dish and freeze for 4-5 hrs or until firm.
Scrape the mixture into flakes with a fork and serve with chunks of freshly cut peach.
