250 g fresh strawberries, hulled
660 g white cooking chocolate, chopped
250 g marshmallows, halved (or use 150g mini marshmallows)
1 cup macadamia nuts
1 ¼ cups dried cranberries
- Preheat the oven to 70°C (60°C fan forced). Line a baking tray with baking paper. Wash the strawberries, pat dry and slice lengthways into 4-5 slices. Arrange slices onto baking tray and bake in the oven for 2-3 hr or until dry. Remove and let cool.
- Grease and line a 20 x 30cm slice pan with baking paper. Melt white chocolate in a heatproof bowl over a saucepan of simmering water, stir until smooth. Remove from heat, allow to cool slightly.
- Add marshmallows, macadamias, most of the dried cranberries and dried strawberries, leaving some for top. Mix until well combined. Pour into the prepared pan then scatter with reserved craisins and strawberries. Place in fridge for 1 hr or until set. Cut into pieces to serve.
