500g raw prawns - peeled, deveined with tail left on
2 teaspoons salt
2 teaspoons pepper
2 tablespoons olive oil
Juice of 1/2 lemon
3 garlic cloves, crushed
2 tablespoons parsley, chopped finely
1/4 cup grated parmesan
To serve, cocktail sauce from supermarket
Line a baking tray with baking paper and set aside. Preheat oven to 200c.
In a large bowl, add all ingredients and stir well with a large spoon until combined.
Place prawns on the baking tray, making sure they’re spread out and not touching each other.
Put in hot oven for 8 minutes. Remove and serve with cocktail dipping sauce on the side.
