2 large sweet potatoes
4 tablespoons garlic butter, store bought
1 teaspoon rosemary leaves, chopped
1 teaspoon thyme leaves, chopped
1 tablespoon lemon juice
Salt & pepper to taste
Grease and line a baking tray.
Using a sharp knife, cut the very bottom off the sweet potato so it will sit flat and not roll about.
Make cuts into the sweet potato that are around 1cm apart or less, being careful not to cut all the way through to the bottom and stopping about halfway down. Set aside.
In a small saucepan, melt garlic butter and add herbs, lemon juice and salt and pepper and stir to combine.
Place sweet potatoes on prepared baking tray and using a kitchen brush, liberally brush butter mixture onto the sweet potatoes. Roast in a 220c oven for 1 hour, basting with garlic butter mixture every 20 minutes. Serve immediately.
