2 x 200 g packets lattice biscuits
2 cups milk
1½ cup cream
4 egg yolks
⅔ cup custard powder
½ cup caster sugar
1 teaspoon vanilla essence
1 package passionfruit decorating icing
- Line the base and sides of a 20cm square pan with baking paper. Arrange the biscuits in a single layer in the base of the pan, cutting to fit if necessary.
Place milk and cream into a saucepan and bring to the boil. Remove from heat. Place egg yolks, custard powder, sugar and vanilla into a bowl. Using electric beaters, beat for 2 min until thick and creamy.
- Gradually add the hot milk mixture while beating. Transfer to a saucepan and continue to heat over a medium heat, stirring constantly until thickened. Spread custard over biscuits and smooth the surface. Top with another layer of biscuits and spread with Passionfruit Icing. Chill until set. Cut into squares to serve.
