¼ cup flaked coconut
½ cup quinoa flakes
½ cup mixed seeds
2 tablespoons cranberry juice, milk or water
¾ cup frozen raspberries
½ cup low-fat Greek or natural yoghurt
8 strawberries, chopped
- In a bowl, combine the flaked coconut, quinoa flakes, mixed seeds, and juice, milk or water.
- Select 2 glasses. Layer the raspberries, half the yoghurt, and combined seed mix into the glasses.
- Divide remaining yoghurt between the glasses and top with strawberries. Garnish with mint leaves. Serve straight away or cover and chill until serving time.
