Salt and pepper, to taste
1 tbsp olive oil
80 g sliced leg ham, chopped
½ cup grated tasty cheese
2 burrito tortilla wraps, warmed
2 tbsp medium taco sauce
fresh coriander, sprigs, to serve
- Whisk eggs seasoned with salt and pepper in a bowl until combined.
- Heat oil in a medium, non-stick frying pan over a medium heat. Add ham. Cook, stirring, for about 4 minutes, or until lightly golden.
- Pour egg mixture over ham. Cook over a medium heat, without stirring, for 30 seconds, or until edges start to set. Using a wooden spoon, drag egg from side-to-side until large curds form and egg mixture is almost cooked. Remove from heat.
- To serve, divide cheese between tortillas. Top evenly with scrambled egg mixture. Spoon over taco sauce. Serve with coriander sprigs.
