3 cups untoasted muesli (385g) (see Tip)
½ cup dried apples, chopped
1 cup Rice Bubbles
½ cup desiccated coconut
¼ cup plain flour
175g unsalted butter, chopped
1/3 cup golden syrup
¼ cup brown sugar, firmly packed
1 egg, lightly beaten
Grease a 20cm x 30cm lamington pan. Line base and long sides with baking paper, extending paper 2cm above pan edges.
Process muesli and apples in a food processor until very finely chopped. Transfer to a large bowl. Add Rice Bubbles, coconut and flour. Stir to combine.
Place butter, syrup and sugar in a small saucepan. Stir, over a medium heat for about 3 minutes, or until butter is melted and sugar is dissolved. Add to muesli mixture with egg. Stir to combine. Spoon into prepared pan. Press evenly over base.
Cook in a moderately slow oven (160C) for about 25 minutes, or until golden brown. Remove from oven. Cool completely in pan.
Lift slice out of pan. Cut into bars to serve.
