Broccoli Tater Tots

Broccoli Tater Tots
Prep: 15 Minutes - Cook: 40 Minutes - Easy - Serves 30

Ingredients

400g brushed potatoes, peeled, chopped

300g broccoli

½ cup grated parmesan

1/3 cup panko breadcrumbs

1 teaspoon onion powder

Sweet chilli or tomato sauce, to serve (Optional)

Method

  1. Cook potatoes in a saucepan of boiling salted water for about 12 minutes or until tender.  

  2. Meanwhile, trim base of broccoli. Chop broccoli into florets and remaining stalk into pieces. Place in a food processor. Process until finely chopped. 

  3. Add broccoli to pan with potatoes. Boil for 1 minute. Drain well. Stand for about 10 minutes to dry out and cool slightly. Transfer to a large bowl. Mash until well combined. 

  4. Stir in parmesan, breadcrumbs and onion powder. Season with salt and pepper. Roll tablespoons of mixture into balls. Shape into 4cm logs. Place on a large oven tray lined with baking paper. 

  5. Cook in a hot oven (200C), turning halfway, for about 20 to 25 minutes, or until light golden. 

  6. Serve with sweet chilli sauce or tomato sauce.
