400g brushed potatoes, peeled, chopped
½ cup grated parmesan
1/3 cup panko breadcrumbs
1 teaspoon onion powder
Sweet chilli or tomato sauce, to serve (Optional)
Cook potatoes in a saucepan of boiling salted water for about 12 minutes or until tender.
Meanwhile, trim base of broccoli. Chop broccoli into florets and remaining stalk into pieces. Place in a food processor. Process until finely chopped.
Add broccoli to pan with potatoes. Boil for 1 minute. Drain well. Stand for about 10 minutes to dry out and cool slightly. Transfer to a large bowl. Mash until well combined.
Stir in parmesan, breadcrumbs and onion powder. Season with salt and pepper. Roll tablespoons of mixture into balls. Shape into 4cm logs. Place on a large oven tray lined with baking paper.
Cook in a hot oven (200C), turning halfway, for about 20 to 25 minutes, or until light golden.
Serve with sweet chilli sauce or tomato sauce.
