2 tblsps mayonnaise
2 tblsps smoky barbecue sauce
1 tblsp hot chilli sauce
2 cups shredded barbecue chicken meat (300g)
50g butter, slightly softened
8 x 2cm-thick slices sourdough
½ cup drained, sliced bread and butter cucumbers
8 slices Tasty cheese
Combine mayonnaise and sauces in a medium bowl. Add chicken. Season with salt and pepper. Stir to coat.
Spread half the butter evenly over half the bread. Turn over, butter-side down. Divide chicken mixture, cucumbers and cheese evenly over the top.
Spread remaining butter over remaining bread. Place, butterside up, over the cheese.
Heat a large, non-stick frying pan over a medium to low heat. Add sandwiches. Cook for about 2 to 3 minutes on each side, or until golden brown and cheese is melted. Remove from pan.
Cut in half to serve.
