These wonderfully wobbly creations are lusciously low fat.
60 ml (¼ cup) water
2 tsp powdered gelatine
1½ Tbsp honey
310 ml (1¼ cups) low-fat vanilla yoghurt or diet vanilla yoghurt
185 ml (¾ cup) buttermilk
2 large figs, cut into wedges, to serve
- Put water in a small heatproof bowl. Sprinkle over gelatine and stir well. Set aside for 10 minutes. Put gelatine mixture in microwave and cook on medium/50% for 1 minute. Stir in 1 Tbsp of the honey. Set aside for 5 minutes to cool slightly.
- Whisk yoghurt and buttermilk in a medium bowl until well combined. Stir in gelatine mixture. Pour mixture evenly between 4 x 125ml (½ cup) dariole moulds. Put on a tray and refrigerate for 4 hours or until set.
- Dip moulds in hot water to loosen. Turn out onto serving plates. Drizzle with remaining honey. Serve with figs.
