125 g butter, softened
1 cup caster sugar
1 tsp vanilla extract
2 cups plain flour
½ tsp baking powder
2 liquid food colouring (pink and green)
- Using electric beaters, cream butter and sugar in a large bowl until fluffy. Add egg and vanilla and beat to combine. Add the flour and baking powder and beat until well combined. Divide the dough into three portions and tint two with food colouring, kneading until combined. Flatten into discs and wrap in plastic wrap. Chill for 1hr or until firm.
- Preheat the oven to 180°C (160°C fan forced). Line 2 large baking trays with baking paper. Remove discs from fridge and roll out each portion between two sheets of baking paper until 3mm thick. Using a 4.5cm cutter, cut out rounds from each coloured dough. Transfer to baking trays, placing 2cm apart. Re-roll dough and cut more rounds.
- Using a 4cm cutter, lightly press into each dough round to form the outer edge of the buttons, then make 4 holes in the centre of each with a skewer. Bake for 10 min. Cool on trays. Pack into bags or glass jars.
