375g spiral pasta
1 tblsp olive oil
8 chicken sausages
1 tblsp Cajun seasoning
1 cup tomato puree
¹∕³ cup home-style ajvar paprika relish
250g tub sour cream
¼ cup chopped fresh coriander
Steamed green beans, to serve
Cook pasta in a stockpot of boiling, salted water until tender. Drain. Cover to keep warm.
Meanwhile, heat oil in a medium, deep, non-stick frying pan over a medium heat. Add sausages. Cook, turning occasionally, for about 8 minutes, or until browned all over. Add seasoning. Cook, shaking pan for about 1 minute, or until sausages are coated. Remove sausages from pan.
Add puree, relish and sour cream to same hot pan. Stir to combine. Return sausages. Simmer, turning sausages occasionally, for about 5 minutes, or until sauce is slightly thickened. Stir in coriander.
Serve sausages over pasta with beans.
