Cajun tofu & vegetable kebabs
Cook: 20 Minutes - easy - Makes 8 - Vegetarian - Vegan - nut-free - dairy-free - egg-free - pregnancy-safe

These seasoned tofu kebabs are a yummy vegetarian alternative for meat or chicken kebabs.

Ingredients

300 g firm tofu, drained, 
cut into 16 pieces

16 small button mushrooms

16 cherry tomatoes

1 zucchini, cut into 16 pieces

1 tbsp Cajun seasoning

8 x long bamboo skewer

2 tbsp olive oil

couscous, to serve (optional)

Dressing

¼ cup lemon juice

2 tbsp olive oil

¼ cup finely chopped chives

Salt and pepper, to taste

Method

  1. Toss tofu, mushrooms, tomatoes, zucchini and seasoning in a large bowl. Alternately thread onto skewers. Drizzle with olive oil.
  2. Heat a large, non-stick frying pan over a medium heat. Add skewers in two batches. Cook for about 5 minutes, turning regularly, or until browned and tender.
  3. To make dressing, combine all ingredients in a small jug. Whisk.
  4. Serve kebabs with dressing 
and couscous (optional).
