1 ½ x 400g boxes frozen lightly crumbed calamari rings
2 x 200g bags shredded iceberg lettuce
227g can pineapple chunks in juice, drained
3 green spring onions, thinly sliced
½ cup toasted slivered almonds
100g packet Chang’s Original Fried Noodles
½ cup Chang’s Oriental Fried Noodle Salad Dressing
Place calamari in a single layer on a large oven tray lined with baking paper.
Cook in a hot oven (200C) , turning halfway, for about 14 minutes, or until golden brown and crisp. Remove.
Meanwhile, combine lettuce, pineapple and onions in a large bowl. Toss well. Scatter with almonds and noodles. Drizzle with dressing.
Serve calamari with salad.
TIP! We used I&J Lightly Crumbed Calamari Rings, however any crumbed calamari can be used. Check cooking times. Crumbed calamari can be pan-fried in oil, if you prefer.
