Ingredients
340g packet butter cake mix
¾ cup desiccated coconut
125g unsalted butter, melted
385g can Woolworths Apple Slices Pie Fruit
¼ cup caramel-flavoured dessert topping
SOUR CREAM LAYER
250g tub sour cream
1/3 cup caramel-flavoured dessert topping
1 egg, lightly beaten
Method

Grease an 18cm x 28cm rectangular slice pan. Line base and sides with baking paper, extending paper 5cm above pan edges.

Place cake mixture in a medium bowl, reserving frosting mix sachet for another use. Add coconut and butter. Mix well. Press evenly over the base of prepared pan.

Cook in a moderately slow oven (160C) for about 15 to 18 minutes, or until lightly browned. Remove. Cool slightly.

To make sour cream layer, whisk all ingredients in a medium bowl until combined.

Spread apple slices over base. Pour sour cream layer over apples, spreading to cover. Drizzle with topping.

Cook in moderately slow oven (160C) for about 20 to 25 minutes or until set and light golden around the edges. Remove. Stand in pan for 30 minutes. Refrigerate for 3 hours, or until firm.

To serve, use baking paper as a guide to lift slice from pan. Cut into squares.
