1 cup popcorn kernels
1 cup olive oil
1 cup caster sugar
assorted natural gel food colouring (4 colours – see tip, below)
- Combine 1/4 cup olive oil, 1/4 cup caster sugar, 1/4 cup popcorn kernels and a few drops of one gel food colour in a medium heavy based saucepan over medium high heat. Swirl the pot to distribute the ingredients every minute until the first popcorn kernel pops. When this happens, immediately place the lid on the pan and shake the pan over the heat every 10 seconds until the kernels stop popping.
- Turn off the heat and shake the pan with the lid on a few times to evenly distribute the coloured caramel over the popcorn, then transfer the popcorn to a lined baking tray to cool and set.
- Repeat with remaining ingredients and colours and once at the popcorn has cooled and hardened, pull apart the coloured popcorn and mix all the colours together.
