Cauliflower bread is the carb-free sensation sweeping social media. Try this tasty grilled cheese version and find out what the fuss is about!
1 medium head cauliflower, cut into florets
1/2 cup parmesan cheese
1 teaspoon Italian seasoning
2 sandwich-size cheddar cheese slices
Place cauliflower pieces into food processor and process until fine and crumbly.
Put cauliflower mixture into microwave-safe bowl and cook on high heat for 10 minutes, stirring occasionally.
Add egg, parmesan and stir to combine. Then add Italian seasoning and stir again.
Shape cauliflower mixture into four balls, about the size of a small apple, and place on a baking tray lined with baking paper. Then squash down each ball and form into the shape of a slice of bread.
Place tray into a 220-degree oven for 15-18 minutes, until lightly golden brown.
Place a slice of cheese on two of the pieces of cauliflower bread, then place the remaining two pieces of cauliflower bread on top to form two sandwiches.
Place back in oven for another 5 minutes, until cheese is melted.
Slice into sandwich halves and serve immediately.
