1 small cauliflower, trimmed and cut into florets
2 garlic cloves
1 cup potato flour
½ tsp cumin
½ tsp cinnamon
¼ cup chopped fresh chives
¼ cup chopped coriander
1 tub tzatziki to serve
- Bring a large pan of water to boil, add the cauliflower and garlic. Simmer for 10 min or until softened. Drain into a colander, return to the saucepan, then roughly mash with a fork.
- In a mixing bowl, whisk together eggs, potato flour, cumin and cinnamon. Add chives and coriander. Add cauliflower to egg mixture, mix until well combined.
- Heat 1 tablespoon olive oil in a large non-stick frying pan over medium heat. Pour ¼-cup portions of mixture into the pan and cook for 2-3 min each side or until golden. Serve with a Greek salad and drizzle with Yoghurt Sauce.
