Super tasty hummus - with a carb-free twist!
1 large head cauliflower, cut into florets
2 tablespoons olive oil
Salt and pepper
1/4 cup tahini
1 tablespoon lemon juice
1 tablespoon honey
2 tablespoons olive oil, extra
Cayenne pepper, chopped parsley and olive oil for garnish
Place cauliflower pieces on a baking tray lined with baking paper. Pour over olive oil and salt and pepper, mix to combine.
Place in a 170-degree oven for 20-25 minutes, until cauliflower is golden brown.
Place cooked cauliflower into a food processor and add tahini, lemon juice and honey and process to combine. While the mixture is processing, add extra olive oil through the top spot and keep mixing until the hummus is combined.
Place in serving bowl and top with a sprinkle of cayenne pepper, shredded parsley and a drizzle of olive oil.
