125 g cherry tomatoes, chopped
2 x 70 g Simply Wize gluten-free pizza bases
100 g (½ cup) drained chargrilled vegetables, patted dry with paper towel, cut into strips
25 g goat's cheese, crumbled
50 g (2 cups) rocket leaves, to serve
- Put tomato in a small food processor or blender and process until smooth. Heat a small non-stick frying pan over a medium heat. Add tomato and cook, stirring occasionally, for 3-4 minutes or until tomato reduces to a thick sauce. Set aside for 5 minutes to cool slightly.
- Preheat oven to 210°C (fan-forced). Line an oven tray with baking paper. Put pizza bases on prepared tray. Spread tomato sauce over bases. Top with chargrilled vegetables and sprinkle over goat’s cheese. Bake for 8-10 minutes or until crust is golden.
- Transfer pizzas to serving plates. Sprinkle over rocket and serve.
