Ingredients
1 large piece store-bought chicken schnitzel, cooked until golden brown
4 thin slices mozzarella
1 medium baguette
3 garlic cloves, crushed
1 tablespoon chopped parsley
1/2 cup melted butter
Method

Cut chicken schnitzel into two large strips.

Wrap each chicken piece into two slices of mozzarella.

Cut ends off the baguette and cut into two pieces, the length of your chicken pieces.

Hollow out the baguette pieces, removing the white bread inside with a knife.

Insert one chicken and mozzarella pieces into each of the baguettes, making two mini baguettes. Then slice baguette pieces into three equal portions and place pieces tightly, side-by-side, on a baking tray lined with baking paper.

In a small bowl, add garlic, parsley and melted butter and stir to combine.

Generously brush garlic butter mixture over baguette pieces, and bake in a 180-degree oven for 20 minutes. Serve immediately.
