1 cup plain flour
1½ tsp baking powder
½ tsp bicarbonate of soda
1½ cups polenta
½ cup grated cheddar cheese
2 tsp salt
1½ cups buttermilk
2 tbsp vegetable oil
⅓ cup finely grated Parmesan cheese
Spreadable cream cheese, to serve
Gherkins, to serve
Pickled onions, to serve
- Grease a 20cm square (8cm deep) cake pan. Line base and sides with baking paper.
- Sift flour, baking powder and soda into a large bowl. Stir in polenta, cheddar cheese and salt. Make a well in the centre. Add combined buttermilk, egg and oil. Stir to combine. Spoon into prepared pan. Smooth over top. Sprinkle with parmesan.
- Cook in a moderate oven (180C) for about 40 minutes, or until golden brown and a skewer inserted into centre comes out clean. Stand in pan for 5 minutes, then transfer to a wire rack to cool.
- Cut into squares and serve with cream cheese, gherkins and onions.
