1 kg bag frozen mixed vegetables (baby beans, carrots, corn and broccoli)
1 cup self-raising flour
3 beaten eggs
1 cup buttermilk
1 cup shredded parmesan cheese
- Cook a 1kg bag of frozen baby beans, carrot, corn and broccoli and drain well. Place into a bowl and lightly mash or cut the larger vegetables into smaller chunks. Stir through 1 cup selfraising flour then add 3 beaten eggs, 1 cup buttermilk and 1 cup shredded parmesan cheese. Heat a little oil in a shallow pan and cook spoonfuls, turning as needed, until golden brown and cooked through. Serve with Rocket, Mushroom and Feta Salad. Accompany with sweet chilli sauce and mayonnaise.
