1 chopped red onion
2 tsp crushed garlic
400 g chicken mince
⅓ cup chilli sauce
3 cups shredded cabbage
2 tbsp cornflour
1 tsp dried mint
300 g packet spring roll sheets
1 - 2 cups oil, for shallow-frying
- Heat a nonstick pan over medium heat. Add 1 chopped red onion, 2 teaspoons crushed garlic and 400g chicken mince. Sauté until lightly browned. Remove from heat, add ⅓ cup chilli sauce and 3 cups shredded cabbage.
- Sprinkle over 2 tablespoons cornflour and 1 teaspoon dried mint. Take one sheet from a 300g packet spring roll sheets. Spoon ¼ cup of the chicken mixture across sheet, brush edges with water, roll to enclose. Repeat with remaining filling and spring roll sheets.
- Chill until required. Shallow-fry for 3-4 min.
