100 g leftover cooked sweet potatoes
2 multigrain wraps
200 g leftover cooked chicken, shredded
1 small handful salad leaves
1 small handful baby plum tomatoes or cherry tomatoes, halved
- Mash sweet potato so that it's very smooth, then divide the mixture thinly and evenly between the wraps.
- Divide the chicken, salad leaves and tomatoes between each wrap.
- Fold the wrap and roll up, making sure that you contain the filling. Eat straight away or wrap in baking paper and cling wrap (or foil) for later.
