Ingredients
1 handful fresh parsley
6 spring onions, quartered
2 cloves garlic
20 g fresh ginger, peeled
20 g extra virgin olive oil
1 tsp ground turmeric
2 carrots, peeled and diced
1 stalk celery, diced
3 - 4 tbsp Tenina's chicken stock powder recipe (see linked recipes below). If using store-bought stock, see tips below.
800 g water
750 g chicken thigh fillets, cut into bite-sized pieces
1 zucchini, 'zoodled' (see kitchen notes below)
Method
- Place parsley into Thermomix bowl and chop 3 sec/speed 7. Set aside.

Place spring onion, garlic, ginger and extra virgin olive oil into Thermomix bowl and chop 3 sec/speed 7. Scrape down sides of bowl and chop again if any large pieces remain.
- Scrape down sides of bowl and add turmeric. Sauté 5 min/Varoma/speed 1. Add carrot, celery, stock powder and water and cook 15 min/100°C/Reverse/speed 1.

Add chicken and cook 7 min/100°C/Reverse/speed 1. Pour hot soup over zoodles, sprinkle with parsley and serve.
